feather rolls


feather rolls
recipe taught to me by crissa.

1 cup boiling water
1 teaspoon salt
1 tablespoon yeast
2 beaten eggs
1/4 plus 1/8 cup sugar
1/2 cup oil
1/4 cup lukewarm water
3 1/2 to 4 cups flour

directions:
mix sugar, salt, and boiling water to dissolve. in another container, dissolve yeast in 1/4 cup lukewarm water. add oil and 1-1/2 cup flour to sugar mixture. add eggs and dissolved yeast. mix. add remainder of flour and mix. let rise until double in size. roll out and cut or pinch into desired rolls (fold ball size). add extra cup flour if rolling out. let dough rise DOUBLE in size.

bake at 400 degrees for 12 minutes. then brush with butter :)

easy beefy cheesy enchiladas

my mother-in-law made this dish for us the other day and it was so good we made it tonight.
it calls for a lot of fresssshhhh ingredients which is really fun and is really good.
the only downside is it takes a little while to make (the chopping of the onions and peppers and stuff is why it takes so long)
BUT it is pretty tasty so i thought i'd share it on here.

nate and i didn't even eat half of it because it's so feeling and now have some AWESOME leftovers for lunches and dinners this week.
