spaghetti pie.

my husband loves eating spaghetti so much that sometimes i have to tell him "no" when he suggests that we should have it for dinner haha. this pie (technically a deep casserole dish) was a great way to mix things up, and still have some spaghetti :)

what you need:
cooked spaghetti noodles
ground beef
1 jar of spaghetti sauce
1 pint of sour cream
1 can of cream of mushroom soup
olives
2 cups of shredded cheese (save 1/2 cup for top)
parmesan cheese


instructions:
brown ground beef and add spaghetti sauce. mix together sour cream and mushroom soup in a bowl.
in a 9X13 pan layer 1/2 of the following:
noodles
spaghetti sauce,
sour cream mixture,
olives,
shredded cheese (and then sprinkle with parmesan cheese)

Then add a 2nd layer of everything!

Bake for 20 min at 350 degrees.
Top with shredded cheese and parmesan cheese and cook for 10 more minutes!

Easy Chicken Pot Pie

If you are single (or married) and want to impress your loved one with a yummy dinner on a tuesday night and don't have much time...try this! everyone i have made this for has loved it, and they asked for the recipe.

all you need is some canned goods, and two pie crusts!

Ingredients:

-Double Pie Crust
-2/3 evaporated milk
-2 cups of cooked chicken (canned chicken works great!)
-1 can of cream of potato soup (i've also tried cream of mushroom or chicken, they all work!)
-1 can of mixed vegetables

Directions:
Line pie plate with crust.
Cook vegetables and drain.
Stir in veggies, chicken, milk, and soup all together. Pour into crust.
Add top of pie crust and slit the top.

Bake at 350 degrees for about 40 minutes.

Frosted Banana Bars

This recipe was given to me by my friend Erica. She used to be mine and Kirsten's roommate and would always cook yummy things for us. Besides her elk meat, erica's banana bars are my favorite! They are so yummy and addicting!




Erica's Frosted Banana Bars
Preheat oven to: 350 degrees
Bake time: 25 minutes


1/2 c. butter (soft)
2 c. sugar


1-1/2 cup mashed bananas (about 3 bananas)


1 t. vanilla
2 c. flour
1 t. soda
a pinch of salt


First creme the butter and sugar together. Then beat it then bananas. Then, add everything else! Then bake at 350 degrees for twenty five minutes! Easy right?
but... when they come out of the oven don't you dare forget the cream cheese frosting!


Cream Cheese frosting
1/4 cup butter
4 oz. cream cheese
2-3 cups powdered sugar
1/2 t. vanilla

Zuppa Toscana

INGREDIENTS
• 1 lb ground Italian sausage
• 1½ tsp crushed red peppers
• 1 large diced white onion
• 4 Tbsp bacon pieces
• 2 tsp garlic puree or minced
• 10 cups water
• 5 cubes of chicken bouillon
• 1 cup heavy cream
• 1 lb sliced Russet potatoes, or about 3 large potatoes
• ¼ of a bunch of kale

Directions:
1. Sauté Italian sausage and crushed red pepper in a large pot. Drain excess fat, refrigerate while you prepare other ingredients.
2. In the same pan, sauté bacon, onions and garlic over low-medium heat for approximately 15 mins. or until the onions are soft.
3. Add chicken bouillon and water to the pot and heat until it starts to boil.
4. Add the sliced potatoes and cook until soft, about half an hour.
5. Add the heavy cream and just cook until thoroughly heated.
6. Stir in the sausage and the kale, let all heat through and serve. Delicious! (I didn’t use the kale because it’s more for looks but you can do whatever you prefer)

Makes: 6-8 servings

Fiesta Chowder

Fiesta Chowder is a recipe my mom gave me when I got married 3 months ago. It's really easy to just cook the chicken then throw everything in the pot. It is a delicious chowder that calls for a fiesta!
My hubby and i like to eat it with chips in place of a spoon :)

Ingredients:
3 T. flour
1 pkg. Fajita Seasoning
4 boneless chicken breasts cubed
3 T. oil (I use canola oil)
1 chopped onion (I sometimes use onion seasoning)
1 t. garlic chopped (or garlic seasoning)
1 (15 oz.) can corn kernel drained
1 (15 oz.) black beans rinsed and drained
1 (15 oz.) can stewed Mexican tomatoes
1 (4 oz.) can green chiles
3 cups water
1 cup uncooked instant rice (can use brown rice if wanted)
1 (10 oz.) condensed Nacho cheese soup (or chedder soup)
3 T. chopped fresh cilantro
lime juice
Tortillas or chips if wanted.

Directions:
Combine flour and fajita seasoning. Add chicken and toss to coat. Heat oil in skillet and cook chicken in skillet until tender. Add onions and garlic, lower heat and saute for 5 minutes. Add corn, beans, tomatoes, green chiles, water, and rice. Bring to boil, reduce heat, cover, and simmer for 5 minutes. Add soup, cilantro, and lime juice.
