Fiesta Chowder

Fiesta Chowder is a recipe my mom gave me when I got married 3 months ago. It's really easy to just cook the chicken then throw everything in the pot. It is a delicious chowder that calls for a fiesta!
My hubby and i like to eat it with chips in place of a spoon :)

Ingredients:
3 T. flour
1 pkg. Fajita Seasoning
4 boneless chicken breasts cubed
3 T. oil (I use canola oil)
1 chopped onion (I sometimes use onion seasoning)
1 t. garlic chopped (or garlic seasoning)
1 (15 oz.) can corn kernel drained
1 (15 oz.) black beans rinsed and drained
1 (15 oz.) can stewed Mexican tomatoes
1 (4 oz.) can green chiles
3 cups water
1 cup uncooked instant rice (can use brown rice if wanted)
1 (10 oz.) condensed Nacho cheese soup (or chedder soup)
3 T. chopped fresh cilantro
lime juice
Tortillas or chips if wanted.

Directions:
Combine flour and fajita seasoning. Add chicken and toss to coat. Heat oil in skillet and cook chicken in skillet until tender. Add onions and garlic, lower heat and saute for 5 minutes. Add corn, beans, tomatoes, green chiles, water, and rice. Bring to boil, reduce heat, cover, and simmer for 5 minutes. Add soup, cilantro, and lime juice.
